I remember an episode, or it might have been a movie when Picard goes into a holodeck when the borg are chasing him and he goes into a Mafia wedding and picks up a chain gun and kills off some borg.

It might just be because if they did use M16s and such the borg would be not so entertaining, but if there is another reason I would love to know.
