Training school and Felyne kitchen will both be unlocked eventually, I believe after killing Rathalos for Elder's urgebt quest. As you kill more of each wyvern/monster, you'll unlock different weapons to use for the wyverns. Once unlocked, another (blue) old woman appears and you can hire cats from here to cook for you.

HR: Hunter Rank. Once you do certain 4* guild quests you'll unlock an urgent mission. For example, to advance from HR1 to HR2, you'll need to complete urgent Four Horns in the guild (not elder).
