You should be able to take down Gycepros with full Vel armour, I used full Vel and also Gen when I fought Gyp.
Take 10 potions, at least one well done steak, paintballs, at least a power seed (maybe armour seed as well), whetstones, antidotes and a pitfall trap.
Before anything, paint the Gyp. Treat the Gyp like a Yian Kut Ku, with the following exceptions:
1. When it's about to flash, run up to it, block the flash, then do a jump in combo when it's receovering from the attack, then roll away on the last hit.
2. When it's does a tail swipe, the tail stretches. So block it, roll away or roll into it's legs and combo. Always roll away on the last hit.
3. When it goes into crazy mode, there isn't much you can do with a Sword&Shield, just watch out for it's poison spits and take some potions/sharpen. You can also set up a pitfall, it runs around the area in a triangular pattern.
4. It's pecking attack steals your items, so avoid being pecked.
5. Another unconventional method is to concentrate on the legs (do jump in attacks) and it'll eventually trip over. Combo the head while it's down, breaking the crystal on it's head stops the flash attack.
