Believe it or not. But it works with both.
By using "their", you'd be referring to the people of New Zealand.
By using "it's", you'd be referring to New Zealand as a country.
'New Zealand may be famous for it's sheep...'
'New Zealand may be famous for their sheep...'
Come to think of it, "their" doesn't really make as much sense as "it's". But hopefully you get the picture.
